About Tamanohikari Yamahai
The Tamanohikari Shuzo is located in Fushimi, Kyoto. The brewery offers a fine Junmai Daiginjo that uses Omachi rice, which is considered to be the best rice for brewing sake. The brewery is well known for finding the perfect balance between sweetness and acidity. This makes the Tamanohikari a rather distinctive drink that is rich and dry. The sake is full bodied and smooth, and offers a fine drinking experience. The finish is smooth and quite refreshing. The flavor of the Tamanohikari is enhanced when it is served at room temperature. Foods such as sushi, sashimi and other fish preparations compliment the Tamanohikari.
A traditional brewing method produces this pure Sake without fortifying it with alcohol or additives. They use 60% milled sake-making rice with natural yeasts and lactobacilli from our 100-year old brewery. It takes twice as long to produce this Sake, which reflects its quality from extra care.
