The Senshin is a Junmai Daiginjo of the Niigata Perfecture. The Asahi Shuzo Brewing Company uses locally grown Takanenishiki rice. The rice grains are individually polished for three days and nights, by which time only 28% of the grains remain. The sake is aged for a year before it is bottled. The drink is smooth and elegant, and quite enjoyable. The alcohol content is 15.5% and the drink has a clean and crisp taste. It flaunts a subtle flavor of honey, cantaloupe and citrus. The Senshin is best served chilled and can be paired with foods such as sushi and sashimi, meat and vegetable dishes.
