The Manabito is a Kimoto Junmai Ginjo from the Hinomaru Brwery. The drink belongs to the Akita Prefecture. It is made with the Takaneminori sake rice which is milled 55% before it is ready for brewing. The drink is made with the traditional Kimoto technique and has an alcohol content of 16%. It is also known by its English name of ‘Awakened’. The drink has a nose that suggests mushroom, bread and ripe fruit. It tastes of fruit and the earth. The Manabito is smooth, silky and a classic. It can be paired with foods like barbecue chicken, cheese and tempura.
