About Katsuyama Akatsuki
The Katsuyama Brewery offers the Junmai Daiginjo, Katsuyama Akatsuki. The English name for the sake is ‘Dawn’ and is quite apt for the drink. The sake is of Miyagi Perfecture and uses Yamadanishiki rice. The brewery uses the centrifuge method to offer a rich and complex sake that suits the tastes of both, the Eastern as well as the Western world. The expensive centrifuge technique separates and filters the sake in a unique manner, giving the drink its distinct taste and texture. It is quite truly the dawn to the traditional ways of sake brewing. With an alcohol content of 16%, the sake is rather elegant and subtle and reveals many delicious layers as the patron savors every sip of the Katsuyama Akatsuki.
The most special of a line of very special sakes. This is a “centrifuge” sake… mash is separated from the sake using a space age and expensive centrifuge machine. This sake is amazingly complex with wonderful opportunities for pairing with both western and eastern cuisines. DO NOT miss this sake if you get the chance to taste it. amazing and sublime!
