The Kakunko or ‘Pride of the Village’ comes from the Sudo Honke Brewery, one of the oldest breweries in Japan. The Kakunko is of the Ibaraki Perfecture and uses Yamadaho sake rice, which is fermented slowly and in low temperatures. The Junmai Daiginjo has an alcohol content of 16%, making it a potent drink. It is unfiltered sake that has an interesting texture. The aroma of the drink is of a floral and fruity blend. The sake is light and smooth and yet, has complex layers that are a delight to discover and savor. The Kakunko should ideally be served chilled and can be enjoyed with fish and chicken dishes.
