The Hideyoshi Flying Pegasus or the Temma Sora wo Kakeru is a Kosho Daiginjo that is brewed by the Suzuki Shuzo and is of the Akita Prefecture. The sake is made with Yamadanishiki and Akita sake komachi rice, which is milled 40%.
The sake is aged to give it an astonishingly complex flavor. It is created with a blend of sake that is aged for 3, 5 and 7 years. The brewery releases only 300 bottles of the Hideyoshi every year. There are many layers of flavor to the drink which make it a pleasure to savor. It has an alcohol content of 16% and can be enjoyed alone or with cheese and nuts.
